Leftover Tomato Sauce Biscuits & Gravy — A Cozy Coastal Brinner

Some of the best recipes start with a little bit of leftover magic — and this one is no exception. One evening, staring down the previous nights homemade tomato meat sauce and craving something comforting-but-fun for dinner, I ended up creating a Brinner twist that’s now a permanent part of my cozy cooking rotation.

Meet: Tuscan Biscuits & Gravy — a rich, creamy gravy brightened up with leftover tomato sauce, poured over golden, buttery biscuits. It’s part Italian red sauce night, part Southern comfort food, and all heart.

Recipe: Tomato-Sausage Gravy with Biscuits

Ingredients:

  • 1 tbsp olive oil or butter
  • 1 clove garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • leftover tomato sauce
  • 1/2 cup heavy cream or half-and-half
  • 1 tbsp flour (to thicken, optional)
  • Salt & black pepper to taste
  • Fresh basil or parsley (optional, for garnish)
  • Biscuits (store-bought or homemade — your favorite kind works!)
  • Eggs (for a fried egg topping if desired)

Instructions:

  1. In a skillet over medium heat,the tomato sauce and let it warm through, about 2 minutes.
  2. Add garlic and red pepper flakes; sauté for about 1 minute until fragrant.
  3. Add cream and stir until combined. If you want it thicker, sprinkle in a little flour and stir until it reaches your desired consistency.
  4. Season with salt and pepper to taste.
  5. While the gravy simmers, heat a nonstick pan with a little oil or butter and fry the eggs to your liking.
  6. Spoon tomato gravy over warm biscuits, and top each serving with a fried egg.
  7. Garnish with chopped fresh herbs and cheese if desired.
  8. Serve immediately and enjoy!
