Leftover Tomato Sauce Biscuits & Gravy — A Cozy Coastal Brinner

One evening, staring down the previous nights homemade tomato meat sauce and craving something comforting-but-fun for dinner, I ended up creating a Brinner twist that’s now a permanent part of my cozy cooking rotation.
Meet: Tuscan Biscuits & Gravy — a rich, creamy gravy brightened up with leftover tomato sauce, poured over golden, buttery biscuits. It’s part Italian red sauce night, part Southern comfort food, and all heart.

Recipe: Tomato-Sausage Gravy with Biscuits
Ingredients:
- 1 tbsp olive oil or butter
- 1 clove garlic, minced
- 1/4 tsp red pepper flakes (optional)
- leftover tomato sauce
- 1/2 cup heavy cream or half-and-half
- 1 tbsp flour (to thicken, optional)
- Salt & black pepper to taste
- Fresh basil or parsley (optional, for garnish)
- Biscuits (store-bought or homemade — your favorite kind works!)
- Eggs (for a fried egg topping if desired)
Instructions:
- In a skillet over medium heat,the tomato sauce and let it warm through, about 2 minutes.
- Add garlic and red pepper flakes; sauté for about 1 minute until fragrant.
- Add cream and stir until combined. If you want it thicker, sprinkle in a little flour and stir until it reaches your desired consistency.
- Season with salt and pepper to taste.
- While the gravy simmers, heat a nonstick pan with a little oil or butter and fry the eggs to your liking.
- Spoon tomato gravy over warm biscuits, and top each serving with a fried egg.
- Garnish with chopped fresh herbs and cheese if desired.
- Serve immediately and enjoy!
